Happy Mardi Gras!

I have so many wonderful memories of Mardi Gras from growing up in New Orleans. I remember some of the costumes I wore, the ladder seats we sat in, scavenging the ground for beads, watching the St. Aug band play, and eating Popeye’s chicken.

Those memories spurred me into having our own little Mardi Gras party despite the fact that we are 600 miles from the real event.

Like most parties I host, I was planning on decorating and cleaning right up to the minute when guests walk in the front door.

This time that plan backfired on me.

Our party was set for 4:00 on a Sunday afternoon. I thought…plenty of time to cook and work on things. That’s a great plan exept that I became sick at 6:00pm the night before the party. I mean, I went down quick and was in bed by 8:15.

In came my superhero husband. He cleaned and cooked up a storm. Without him there would have been no party. I was still in bed when it was only one hour until the party and went back to bed about an hour after the party.

So, our decorations were minimal. Not my best work but it is what it is. After all, I’m pretty sure everyone was there for the crawfish pasta and king cake, anyway.

My mom sent the adorable mask along with Mardi Gras plates, napkins, and shirts for the party. The mask was placed in a flower vase filled with purple beads. I added the gold signs which read, “Let the Good Times Roll,” and the same in french,”Laissez Le Bons Temps Rouler.”

The only other decoration I put up for the party was the “Parades” sign. I actually wasn’t able to finish the sign since I got sick so the last parade, Crescent City, has a lighter coat of paint than the others.

And no I haven’t gone back to complete the sign. I got things to do.

I remember getting up early on Mardi Gras day to get to our spot on the parade route. First came Zulu and the thrill of them throwing decorated coconuts, Rex with the huge cow float, and then the truck parades, Elks and Crescent City, which each had over 120 floats in a row.

Steps in creating the sign:

1) Paint large board purple

2) Print out the names of the parades and arrange on the board.

3) Take the slip of paper with the parade name on it and turn it over. Color the letters with a white crayon (you are coloring on the back of the paper).

4) Turn the paper over so that the crayon will make contact with the board.

5) Trace the letters with a pen onto the board.

6) Lift the paper up and you will see a faint outline of the parade name.

7) Color inside the letters with paint.

Frozen Cheesecake

I was at the Cheesecake Factory the other night when I watched a young girl make a complete fool of herself.

I had just eaten dinner with a friend when I decided to stop by The Cheesecake Factory and grab a surprise treat for my husband.

Ahead of me in the to go line were three young women who couldn’t have been older than twenty-two. Two of them ordered quickly while the third hummed and hawed over her decision.

I was thrilled when she decided on the Chocolate Godiva Cheesecake.

Little did I know that would be the end of my excitement for awhile.

The woman behind the counter prepared a piece of the cheesecake and placed in the to go box.

When the young woman saw the piece of cheesecake she flipped.

“This isn’t what I ordered! It doesn’t even look the same. I said the Chocolate Godiva Cheesecake.”

“Ma’m this is the Chocolate Godiva Cheesecake.

“No it’s not. Just look at this piece. It looks pale and white compared to the piece in the display.”

“The piece in the display has been sitting out for awhile. I got this piece from the refrigerator so it’s a bit fresher.”

“I didn’t say I wanted a fresher piece! I want one that looks like what I ordered. This is just ridiculous. Why are you trying to give me a different piece of cake?

“Ma’m, the piece I prepared for you to take home is what you ordered.”

“I ordered the Chocolate Godiva Cheesecake and this doesn’t look anything like it.”

At this point the manager appeared, quickly resolved the issue, and apologized for the misunderstanding.

I meanwhile, continued to stand there stunned.

Who is this person? Why does she think it’s okay to act this way?

While my husband was thrilled with his cheesecake surprise I’m not sure the young woman had the same reaction when she got home and finally tasted her less than fresh display case cheesecake.

 

 

January Goals Revisited

Setting goals by the month turned out pretty well for me. While I accomplished a lot of things on and off my list, I will admit I sometimes felt stressed by the list. There were moments when I was sitting on the couch thinking, “I really need to get up and make some pillows.” While I thought this I never actually got off of the couch to work on anything but I still thought it.

Let’s review my January Goals:

*Have a Date Night with Husband check and check! We actually got babysitters twice during the month.

*Keep downstairs clean & ready for visitorscheck! – The upstairs might have looked like a bomb went off but it didn’t matter to me. My floors were vacuumed, counters straightened, and toys were off the floor. My definition of clean would probably not be what someone else’s was but the house always felt clean enough in case someone dropped by. In other words, the mad dash panicked cleaning lady did not have to make an appearance.

*Complete Valentine Bingo game for etsy – check!

*Sew pillows for my bed – check! You will see the results soon.

*Add 20 items to my 143 Acts listcheck! – #1, #2, #3 – bought bags of food for homeless at store #4 – gave unopened bottle of champagne to neighbors #5 – complimented stranger on her skirt #6 – gathered carts in grocery store lot and put them away #7 – sent email to teacher I used to work with telling her we still use the baby gift she gave us nine years later  #8 – dropped off clothing at Goodwill  #9 – sent in supplies to teacher #10 – sent in teacher wish list items #11- complimented mom at Kindermusik  #12 – told mom her daughter was well behaved #13, #14, #15, #16 – waited for a moment so could hold door open for mom coming into school with stroller  #17 – shared Angry Bird Valentines I created  #18 – returned extra grocery carts #19, #20 – complimented a mom on outfit

*Try one new recipe – check and check and check! Three new recipes in one month! Who am I? Julia Child? We tried the Bacon Cornbread Muffins, a Jambalaya recipe, and these very tasty 15 Min. Sticky Buns.

*Complete bathroom redo – check, sort of – the pictures need to be hung tonight

*Knock $100 off monthly food bill – Fail! In a huge way!completely over budget – spent entirely too much money – remember those 2 times we went out by ourselves? We ate at mighty expensive places and indulged – add 2 girls nights out for me with expensive trips to Costco and it just spelled failure for us – hopefully we’ll do better next month.

*Scrapbook 10 pages for Caroline – checkI actually completed 19 pages so this is a huge weight lifted off my back. I kept stalling on working on Caroline’s baby book but always felt guilty since the boys have several books. Now I can proudly say Caroline has a scrapbook now and she’s already 5 months old in it. Hey, if I hadn’t started she still wouldn’t have anything so I figure this is a great start.

Alright, this wraps up a pretty good month for me in terms of accomplishing goals. While I felt some mild panic set in around January 20th , I persevered and finished many projects. Did you accomplish anything your excited about this month?


A Proud Mom

My six year old has come over to the dark side with me.

At least that’s the opinion of my husband.

To really understand this scenario you have to go back with me thirty years.

The place I remember going out to eat more than any other growing up is Pancho’s.

Glorious Pancho’s.Enchiladas made with cheese from a can.

Tamale sauce with a one inch top layer of fat.

Sopapillas still dripping in oil.

And the pinatas at your birthday…….

…..don’t even get me started over that thrill.

When our family gets together at the holidays, there has to be at least one trip to Pancho’s.

Well, my husband doesn’t get it.

Neither does my brother-in-law who is married to my sister.

They’re what we like to consider, “Pancho outsiders.”

They weren’t as fortunate as us to grow up with this delicacy so they don’t understand.

When our family goes to Pancho’s for the holidays, my husband always chooses to work that day. Whatever. More chiquitos for us.

So yesterday, my son and I were discussing places to eat for my birthday.

“No way,” was my response when Steak n’ Shake was suggested.

“No can do,” when Pizza Hut was offered.

But then he said, “What about Pancho’s?”

“Now there’s an idea son. I like it.”

And then he said the words I will never forget.

“When I grow up I want to work at Pancho’s so I can eat their food everyday.”

There just couldn’t be a prouder moment for this mom.

My family was equally proud when I told them.

Imagine, mother and son eating lunch together everyday enjoying tacos and refried beans.

Just the two of us making wonderful memories.

After all, my husband will be stuck eating leftovers at the house because he never came over to the dark side.

Hunting

How long have you stood looking into your pantry trying to decide what to eat?

I think I stood there for 5 minutes today before coming out with a granola bar.

A granola bar, that’s it. Nothing exciting.

You’d think the choice would have been easier since yesterday I went to Costco and spent $170 on groceries.

But alas, it seems I didn’t buy the cheeseburger in a box that would have made me oh so happy.

Damn my store buying will power.

Where to Go? – Restaurant Printable

My husband and I had a date night on Saturday.

Once the babysitters were settled we left.

We then drove around aimlessly for 40 minutes because we couldn’t think of a new restaurant to try.

 It seems like every other time we are in the car, driving from one activity to the next, we see a new place and say, “Next time we should try that place.”

But inevitably, we never remember the restaurant when its time to choose a place to eat.

We even say to ourselves, “We need to write that name down.”

But we never do.

Tuesday To Do Party Todays Creative Blog

De-Lish Oreo Treats

This week we made these Oreo Treats for our friends, neighbors, and teachers. Let me just tell you, they are delicious. The best part? They are simple to make.

Chocolate Covered Oreo Treats

Ingredients:
2 packages of Oreo Cookies
2 (8 oz) blocks of cream cheese, softened
4 packages of semi – sweet chocolate (8 blocks in each package)
Any toppings: crushed candy, mints, toffee
 
Directions:

1 – Crush the Oreos into fine crumbs using a food processor or rolling pin & cutting board

2 – Mix Oreo crumbs with cream cheese – best to just get in their with your hands and mix

3 – Roll into balls (1 inch or so) and place on a cookie sheet which is covered in wax paper.

4 – Refrigerate for two hours

5 – Melt chocolate in a double burner (I used use a smaller pot in a larger pot filled with water)

6 – Drop one or two Oreo balls into the melted chocolate, using forks to rotate them and cover them completely. Lift with fork and allow excess chocolate to drip back into pot.

7 – If you are putting a topping on them do so now.

8 – Place in refrigerator again and let them chill.

9 – Pour yourself a large glass of milk and enjoy! Bag them up for gifts!

Artichoke Pesto Pinwheels by Act Fast Chef

Since I am the world’s worst cook you don’t find a lot of recipes on this blog…unless they have chocolate chips, and then I am all over it. So I thought it would be fun to find someone else to share a delicious recipe with you…and Elizabeth from Act Fast Chef is just the person.

Hi there!  I’m Elizabeth from Act Fast Chef.  Thanks so much Jennifer for letting me guest post!

For those of you who don’t know me, I am a busy mom of a toddler, wife to the Husband and I also work full time outside of the house.  And, of course, I blog!  I started Act Fast Chef this year as a creative outlet for myself.  Also, I found myself becoming addicted to blogs, so I figured I should join in on the fun.  Act Fast Chef focuses mainly on meals that you can get to the table really quickly.  Or meals that you can prepare quickly, but then take care of your family or work while the meal cooks.

I am always looking for new meals.  I am inspired by bloggers, magazines, and Martha (of course).  For this particular recipe, I was inspired by a Pepperidge Farm advertisement and my chicken and artichoke pizza.  Seriously!  An ad inspired me. The ad had these puff pastry spiral things that I knew I could stuff with the toppings from my pizza.  I was excited!  So I made them for lunch one day – and they were gone before I could even get them off the baking tray.  So yummy!

Artichoke Pesto Pinwheels
Ingredients:
1 sheet of puff pastry, thawed
1 package of dry pesto sauce mix
2 cooked chicken breasts,chopped
3-4 canned artichoke hearts, chopped
4-5 pieces well done bacon, crumbled
about 1 C shredded mozzarella cheese
1 egg white

Instructions:

Preheat oven to 400 F

Unfold puff pastry on clean floured surface, or unfold on parchment paper.  Follow directions on pesto sauce mix to make a pesto rub (mix the pesto with about 2 T of olive oil).  AFC note: Don’t make the pesto sauce since it will be too runny and will cause the puff pastry to get soggy!

Spread the pesto rub onto the puff pastry and then layer on the chicken, artichoke and bacon.  Top the layers with the mozzarella cheese.

Starting with a short side of the pastry, slowly roll it up to form your pinwheels.  After forming the roll, brush the entire thing with a light brushing of egg white.

Using a sharp chef’s knife, slice the pastry into about 12 slices.  Place the slices on a baking sheet lined with parchment paper and brush the exposed sides with a light brushing of egg white.

Place baking sheet in oven and bake for about 15-20 mins or until brown.

Running for Pie

If you’ve read my blog anytime in the last 3 months you know I’m training for a half marathon and pretty much hating every step of it.

Regardless of this dislike, I am committed and will push on for two more weeks.

One big hurdle in getting to race day is over for one of my sisters and me.

On Thanksgiving we ran 9 miles. Definitely an accomplishment for us.

We ran 4 miles before a 5 mile Turkey Day run.

I use run loosely for myself but Kelly truly rocked it on the run.

7 AM before our run, about fifty degrees outside, apparently Kelly had some dribble issues that morning

Since we were running on Thanksgiving morning I felt I had a built in dangling carrot.

Mile one, I was running for turkey.

Mile two, I was running for stuffing.

Mile three, I was running for gravy.

Mile four, I was running for mashed potatoes.

And mile five, I was running for PIE!

My strategy worked for awhile but around mile four (really mile eight for us) is quite working. Right along with my Ipod. Now, I could hear my huffing and puffing along with everyone who was passing me by. Instead of mashed potatoes and pie I thought about pain and more pain.

Despite my negativity, I finished the race. I might add that I finished immediately ahead of a woman pushing a triple stroller containing two year old triplets.  Some would be ashamed of that fact but I’m focusing on the AHEAD OF A WOMAN part.

It took me just under one hour and two minutes to complete the race while Kelly finished right at one hour. What can I say, her entire five miles were devoted to wine.

Monster Food & Mummy Wraps

We had our second annual Halloween party over the weekend and for the second time I forgot to take any pictures. I set up these photos after everyone had gone home and right before I crashed on the couch. In addition to the new food below, I also served the same food from last year.

Marshmallow Pops: Place stick through marshmallow, dip in chocolate, add sprinkles, thank husband for wonderful marshmallow holder he created, place in refrigerator for 20 minutes

Food on a stick is always popular and these were no exception.

Chocolate Witch Fingers – Use a paint brush and melted chocolate to paint the fingernails. Allow to cool in the refrigerator for ten minutes. Fill up remaining space in the mold with different colored melted chocolate. Lay pretzel sticks into the chocolate and cover with more chocolate. Place in fridge for 20 minutes.

Halloween Cookies (known in our house as the Christmas cookies despite the shape of the cookie or the time of the year)

Alex and Andrew named and labeled all of the party food. Dracula’s Skin was banana bread slices while the Monster Teeth were Rice Krispie Treats. They had a lot of fun creating these…let’s just say the Marshmallow Pops above were labeled Frankenstein Poop. Yes, we through classy affairs around here.

Along with our party boards, there were games and crafts to keep the kids busy. A big hit with the 3 to 7 crowd was my Halloween Bingo, I gave plastic spiders to the winners.

The fourth grade crowd primarily ignored my games in favor of a football game but did decide to stop to play the “Mummy Wrap.”

Kids got into groups of two with a roll or two of toilet paper and wrapped each other as mummies.


That WRAPS up (Ha!) another edition of our Halloween party. The left over Rice Krispies have been eaten by me (about 20 in 2 days – NOT A JOKE!) and the games put away until next year. Hope your Halloween is filled with lots of sugar and dressing up.
